Can you guess what my favorite FRUIT flavor is? Mangoes are my passion. Any chance I get, I add mangoes to the menu, the dish or the dessert. And so here it is once again. Mangoes are in the house! In this case, the Mangoes found their way on this heavenly ANGEL FOOD cake!

And what fun I had! MANGOES are in season and sweet as ever. I just had to add my favorite fully ripened sweet Ataulfo mangoes to this delightful ANGEL FOOD CAKE recipe by Abby Dodge, cookbook author and baker guru.
Every month, Abby Dodge creates a “Bake Together” event by providing her readers with a base recipe. Then whoever wants to bake along, is free to jump in and join. We are allowed to embellish the recipe with our own touches, a favorite flavor here and there, different additions or whatever suits our fancy.
This was such an easy cake to put together. The Angel Food Cake is one of our family favorites .It is delicate, light and fluffy. Its angelic air-like texture provides a good base for any cake flavor you want to create. In my case, I changed the original caramel topping and added mango puree and fresh mango . I knew the outcome would be a fruity and tropical dessert.
After baking and allowing the Angel Food Cake to cool on the counter, I started on the caramel. I added a few tablespoons of mango puree to this and the golden syrup glazed the cake perfectly. Even better, I made a separate mango syrup consisting of mango juice , sugar, and fully ripened fresh mango, cut in cubes. I put it all together on top of the cake and it was such a marvelous, majestic MANGO Caramel Angel Food Cake !
Slice and serve it right after a big family meal. It’s light, delicate and mango-licious!
MANGO CARAMEL ANGEL FOOD CAKE
Here is the complete recipe of Abby Dodge’s ANGEL FOOD CAKE . Bake it and allow to cool for a while. This will give you time to prepare the 2 toppings : Caramel Topping and the Mango SyrupTopping:
CARAMEL TOPPING with MANGO FLAVOR:
1 cup granulated sugar
1/8 cup mango juice
Heat the sugar in a heavy sauce pan. It will turn dark golden brown and will be bubbly, in about 5-6 minutes. At this stage, add the mango juice. Tilt the pan around to blend the juice and syrup well. Pour this on top of the Angel Food Cake. The caramel topping will harden right away.
MANGO Syrup TOPPING:
1 whole fully ripened Ataulfo mango (some Asian groceries refer to it as Champagne mangoes or Manila mangoes), sliced in half, seeded, cut in cubes
½ cup sweet fresh mango puree or canned juice
½ cup granulated sugar
- Boil together the mango puree and the sugar. In about 5 minutes, it turns a golden brown and has syrupy texture.
- Add the mango cubes and stir quickly. Work fast and add this to the top of the Angel Food Cake.
